When To Drink
Wine ready to drink immediately, but it can evolve well and you can let it rest in the cellar for even more than 10 years. Let it air for about 15 minutes before drinking it.
Tasting Notes
Excellent expression of the vine, the nose is vibrant, very warm but elegant, with notes of ripe carob which are the signature of the territory. Red cherry fruity, with notes of chocolate and tannins very well inserted in the gustatory texture. Ready but with excellent growth prospects.
Vinification and Refinement
Vinification in red with maceration on the skins for 15 days at a temperature of 26/30°C.
Aging in stainless steel, 8 months in used French oak barriques, then in the bottle.

Sapling training, typical of southern Italy, 50-year-old vineyard exposure to the south. Eloro DOC area near Pachino at 30 meters above sea level
