Tasting Notes
The olfactory bouquet is complex with notes of ripe citrus fruits, hazelnuts, amaretto and iron minerals. On the palate it is corresponding with pungent hints of apple, mandarin, gentian, chalk, dried apricot and slightly sapid hints.
Vinification and Refinement
Fermentation takes place in presence of the skins in open 22 hl vats without temperature control and without selected yeasts, enzymes and clarifications.
One month decantation in stainless steel tanks, then in 12″ oak barrels hl for at least one year.
Aging in glass for at least 5 months.
