When To Drink
Wine ready to drink immediately, but it can evolve well and you can let it rest in the cellar for even more than 4-5 years.
Tasting Notes
Very intense ruby red colour, still rather fresh bouquet with notes of red berried fruits immersed in a delicate vanilla side dish. Dry, full flavor, rich in body and structure accompanied by polyphenolic compounds that allow for long aging.
Vinification and Refinement
Crushing and destemming, maceration on the skins for about 12-15 days. After racking and the first rackings, the wine is left to age in oak barrels for about 18 months. After this phase, we select a 3000-litre batch by blending the various vineyards and extend the aging in 30 hl barrels for another 12/18 months.
Vineyard
Elvetian geological zone with soils rich in compact sand and clay Tortonian geological zone with fine calcareous / silt-sandy soils
